Now that we’ve settled into the comfort of our homes to stay safe and healthy, we’re presented with the perfect opportunity to be adventurous in the kitchen. It’s the ideal activity for keeping ourselves focused and creative, not to mention giving ourselves and our families new meals to be excited about. Besides, it is spring after all, so why not celebrate the season with some in-season recipes?

From breakfast to dinner, here are four that we find particularly inspiring!

1. Breakfast: Pizza

Yes, you read that right. Pizza for breakfast! But don’t worry, it’s packed with wholesome ingredients like asparagus, spinach, gruyère cheese and eggs. The key is to make sure that you get a nice golden crunch on the bottom by baking it in the oven at 450°F for 15 minutes if the dough is uncooked, or at 400°F for 8 minutes if it’s pre-cooked. You can easily freeze them as well!

There’s something quite satisfying about a bowl of refreshing and vibrant pea soup, but for a creamier texture add spinach and avocado to the mix as well! Comforting and filling, it can be made in large batches and is versatile if you want to add garnishes of your choosing. In this recipe, instead of adding cream for a smooth soup, add the avocado right before blending all the ingredients for a thick consistency. Choose a piece of freshly baked bread to dip into the soup, and sprinkle some blue or goat cheese on top as the final touch.

3. Dinner: Angel Hair Pasta

Simple and hearty, this delectable angel hair pasta can be made by adding other seasonal vegetables if you are not a huge fan of zucchini – but try it at least once, you won’t regret it! This meal is tasty both hot and cold and makes for a great lunch while you’re working at home. If you have some leftovers the next day, drizzle some olive oil on top for a quick meal that will hit the spot!

What could be better for raising your spirits than a decadent trifle cake? Make sure to give yourself enough time because it has to be chilled in the fridge for at least 3 hours. What makes this recipe extra special is the dried lavender that you can mix into the mascarpone – it will instantly elevate it to the next level.
